The Introduction of the Special Issue In the last decades, edible films and coatings technology have emerged as an alternative to synthetic plastics for food applications, receiving considerable attention from the food industry and researchers. The main advantage of such sustainable technology is that they can be consumed with the products since edible films and coatings are based on natural polymers and food grade additives. The functionality and performance of the food-coating material mainly depend on their barrier, mechanical, colour and/or antimicrobial properties, which in turn depend on film/coating composition and development. Because of the global nature of the food supply, safety concerns and new challenges facing the food industry must to be improve and expand both at the production and processing levels.

Submission guidelines All papers should be submitted via the Probe-Food Science Research submission system: http://probe.usp-pl.com/index.php/FSR Submitted articles should not be published or under review elsewhere. All submissions will be subject to the journal’s standard peer review process. Criteria for acceptance include originality, contribution, scientific merit and relevance to the field of interest of the Special Issue.
